Killing the Pig Tuesday 03 August   Back

Today we killed a "pig" (or more accurately, a hog)!! Actually, it is a Polish custom to kill a pig to make all fresh sausage, etc for a wedding party after the ceremony. The farmer/butcher who did the work for Jan and Janina is actually raising two "pigs" and one steer for his granddaughter's wedding.

What impressed me about the whole process this morning was the intense way in which these Polish men worked. The farmer who sold the pig to Jan actually helped with the whole process as a friend as though he were getting paid to do that too.

View perhaps the second best picture Gary has ever taken in his life (A picture of the butcher's grandchildren, but it contains part of the pig carcass in the background — viewer beware.)

Mel and Jan clean the trough used to hold the pig
The finished product: sausage
